Ingredients

  • 1 cup (222g) unsalted butter
  • 1 cup (208g) dark brown sugar, packed
  • 1/2 cup (100g) granulated sugar
  • 2 large egg yolks
  • 1 tsp vanilla extract
  • 2/3 cup (173g) pumpkin puree
  • 2 cups (265g) all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp kosher salt
  • 1 tsp pumpkin pie spice (optional)
  • 1 cup (180g) semisweet chocolate chips, plus more for topping

Instructions

  1. Place a fine-mesh strainer over a bowl and lay a paper towel inside. Scoop the pumpkin onto the paper towel and let it sit to draw out moisture while browning the butter.
  2. In a saucepan over medium heat, melt the butter, stirring occasionally. Watch for it to turn from bubbling to quiet foaming, then stir continuously until it reaches a light amber color and a nutty aroma. Remove from heat and let cool.
  3. In a medium bowl, whisk together the flour, baking soda, salt, and pumpkin pie spice. Set aside.
  4. Preheat the oven to 350°F (175°C) and line a large baking sheet with parchment paper.
  5. Transfer the pumpkin to a clean paper towel. Wring it out to remove excess moisture, repeating this process until the pumpkin is well-drained.
  6. Pack the drained pumpkin into a 1/3 measuring cup, allowing a tiny bit to overflow.
  7. In a large bowl, combine the dark brown sugar, granulated sugar, and brown butter (including the brown bits). Whisk to combine.
  8. Add the egg yolks, vanilla, and squeezed pumpkin to the mixture and whisk until smooth.
  9. Gently fold in the dry ingredients using a rubber spatula. Just before fully combined, add the chocolate chips and mix until incorporated.
  10. Using a large 2 oz cookie scoop, place dough balls onto the prepared baking sheet. Bake for 10-12 minutes, until edges darken slightly and the centers are puffed.
  11. Immediately add a few more chocolate chips on top of each cookie after taking them out of the oven. Transfer cookies to a cooling rack.
  12. Let cookies cool for about 15 minutes before serving. Enjoy!
