Ingredients

  • 1/2 cup (110g) unsalted butter, room temp
  • 1/2 cup (100g) granulated sugar
  • 1/4 cup (55g) light brown sugar, packed
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 tsp kosher salt
  • 1/2 tsp baking powder
  • 2 cups (264g) all-purpose flour
  • 1 cup (170g) mini semi-sweet chocolate chips, plus more for topping
  • Flaky sea salt, for topping
  • 1/2 cup (120g) Biscoff creamy cookie butter
  • 1/4 cup (55g) unsalted butter, melted
  • 1 tsp vanilla extract
  • 1/2 tsp kosher salt
  • 1 cup (100g) powdered sugar
  • 2 tbsp cornstarch
  • 2 tsp milk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line an 8×8 baking pan with parchment paper, allowing the paper to hang over the sides for easy removal.
  2. In a mixing bowl, cream together the unsalted butter, granulated sugar, and brown sugar until light and fluffy. Add the egg and vanilla extract, mixing until well combined.
  3. Stir in the kosher salt and baking powder. Gradually add the all-purpose flour and mix using a rubber spatula until just combined. Fold in the mini chocolate chips.
  4. Press half of the cookie dough into the bottom of the prepared pan to create a thin layer.
  5. In a separate bowl, whisk together the cookie butter and melted butter until smooth. Add vanilla and salt, then mix in powdered sugar. Finally, add cornstarch and milk until the mixture resembles play-dough consistency.
  6. Spread the cookie butter layer evenly over the cookie dough base. Crumble the remaining cookie dough on top, covering as much of the cookie butter layer as possible. Sprinkle with additional chocolate chips.
  7. Bake for 28-32 minutes, until golden brown. Use a butter knife to press down the edges after removing from the oven to ensure even cooling.
  8. Sprinkle flaky sea salt on top and let cool for at least 30 minutes. To slice, run a knife along the edges and lift the bars out of the pan. Cut into pieces and enjoy!
