Delicious Granny Cake Recipe

This delicious Granny Cake is perfect for any occasion with family and friends. It s moist, flavorful, and topped with a delightful glaze!

Ingredients

  • 1 ½ cups granulated sugar
  • 2 cups unbleached all-purpose flour
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 - 20 oz can crushed pineapple with juice
  • 2 eggs
  • Non-stick spray (butter flavored)
  • ¾ cup packed brown sugar
  • 1 cup chopped pecans
  • 1 can evaporated milk
  • ½ cup granulated sugar (for glaze)
  • ½ stick of butter
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Spray the bottom and sides of a 9x13 inch baking dish with non-stick spray.
  2. In a large bowl, combine the granulated sugar, flour, baking soda, salt, crushed pineapple with juice, and eggs. Mix until well combined using a spatula or wooden spoon.
  3. Pour the batter into the greased baking dish.
  4. Evenly sprinkle the brown sugar and chopped pecans on top of the batter.
  5. Bake the cake for 40-45 minutes or until a toothpick comes out clean when inserted into the center.
  6. While the cake is baking, prepare the glaze. In a small saucepan, combine the evaporated milk, sugar, and butter. Cook on low heat until the sugar is completely dissolved. Remove from heat and stir in the vanilla extract.
  7. When the cake is done baking, remove it from the oven and poke holes in it using the back of a wooden spoon or a fork.
  8. Pour the glaze evenly over the hot cake.
  9. Allow the cake to cool completely before serving.
