- 1 cup (208g) dark brown sugar, packed
- 1/2 cup (100g) granulated sugar
- 2 large egg yolks
- 1 tsp vanilla extract
- 2/3 cup (173g) pumpkin puree
- 2 cups (265g) all-purpose flour
- 1 tsp baking soda
- 1/2 tsp kosher salt
- 1 tsp pumpkin pie spice (optional)
- 1 cup (180g) semisweet chocolate chips, plus more for topping
Instructions
- Place a fine-mesh strainer over a bowl and lay a paper towel inside. Scoop the pumpkin onto the paper towel and let it sit to draw out moisture while browning the butter.
- In a saucepan over medium heat, melt the butter, stirring occasionally. Watch for it to turn from bubbling to quiet foaming, then stir continuously until it reaches a light amber color and a nutty aroma. Remove from heat and let cool.
- In a medium bowl, whisk together the flour, baking soda, salt, and pumpkin pie spice. Set aside.
- Preheat the oven to 350°F (175°C) and line a large baking sheet with parchment paper.
- Transfer the pumpkin to a clean paper towel. Wring it out to remove excess moisture, repeating this process until the pumpkin is well-drained.
- Pack the drained pumpkin into a 1/3 measuring cup, allowing a tiny bit to overflow.
- In a large bowl, combine the dark brown sugar, granulated sugar, and brown butter (including the brown bits). Whisk to combine.
- Add the egg yolks, vanilla, and squeezed pumpkin to the mixture and whisk until smooth.
- Gently fold in the dry ingredients using a rubber spatula. Just before fully combined, add the chocolate chips and mix until incorporated.
- Using a large 2 oz cookie scoop, place dough balls onto the prepared baking sheet. Bake for 10-12 minutes, until edges darken slightly and the centers are puffed.
- Immediately add a few more chocolate chips on top of each cookie after taking them out of the oven. Transfer cookies to a cooling rack.
- Let cookies cool for about 15 minutes before serving. Enjoy!
