Soft Frosted Sugar Cookies

These soft frosted sugar cookies are WAY better than Lofthouse! With a tender texture and topped with smooth vanilla buttercream and sprinkles, they re a delightful treat.

Ingredients

  • 2 1/2 cups (320g) all-purpose flour
  • 2 tbsp cornstarch
  • 1 tsp baking soda
  • 1/2 tsp kosher salt
  • 10 tbsp unsalted butter, room temp
  • 1 cup (200g) granulated sugar
  • 1/4 cup (50g) vegetable or canola oil
  • 1 large egg + 1 egg yolk, room temp
  • 2 tsp vanilla extract
  • 3/4 cup (185g) unsalted butter, room temp (for frosting)
  • 2–3 cups powdered sugar
  • 1 tsp vanilla extract (for frosting)
  • 1–2 tbsp milk
  • Pink gel food coloring (optional)
  • Rainbow sprinkles (for topping)

Instructions

  1. In a medium bowl, whisk together the flour, cornstarch, baking soda, and salt.
  2. In a large mixing bowl, cream together the butter and sugar on medium-high speed for 2-3 minutes until light and fluffy.
  3. With the mixer on medium-low speed, gradually pour in the oil. Scrape down the bowl and mix in the eggs one at a time.
  4. Add vanilla extract and mix again, scraping down the bowl as needed.
  5. Incorporate half of the dry ingredients, mixing lightly, then add the remaining dry ingredients until just combined. Be careful not to overmix.
  6. Cover the dough with plastic wrap and chill for 30 minutes.
  7. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  8. Using a 2oz cookie scoop, scoop the dough, roll into balls, and lightly flatten the tops before placing them on the baking sheet. Bake in batches of 4-5 cookies.
  9. Bake for 12-15 minutes or until the edges are a very pale golden color. Let cool on the baking sheet for 3 minutes before transferring to a cooling rack.
  10. For the vanilla buttercream, beat the butter until smooth. Gradually add powdered sugar, mixing until well combined.
  11. Add vanilla and 1 tbsp of milk. Adjust with more milk or powdered sugar to achieve desired consistency. If desired, mix in pink gel food coloring for a light pink hue.
  12. Spread the frosting on cooled cookies and top with rainbow sprinkles. Enjoy!
