Chewy Spice Cookies

Ingredients

  • 2 2/3 cups (350g) all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp ground cinnamon
  • 1 1/2 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1 cup unsalted butter, room temperature
  • 3/4 cup (180g) dark brown sugar, packed
  • 3/4 cup (150g) granulated sugar
  • 1 large egg
  • 1/4 cup (80g) unsulphured molasses
  • 1 tsp vanilla extract
  • Coating: 1/2 cup (100g) granulated sugar, 1 tsp ground cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C) and line a large baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, salt, and spices. Set aside.
  3. In a large mixing bowl, use a hand or stand mixer with the paddle attachment to beat the butter and sugars on medium-high speed for 2-3 minutes until smooth and fluffy.
  4. Scrape down the bowl, then add the egg, molasses, and vanilla. Mix again on medium-high speed for another 2-3 minutes until silky and creamy.
  5. Pour in half of the dry ingredients and mix on medium-low speed until barely combined. Scrape down the bowl and add the remaining dry ingredients, mixing again on low until just combined.
  6. Use a rubber spatula to fold the dough, ensuring no dry ingredients are stuck at the bottom.
  7. In a separate bowl, mix the granulated sugar and cinnamon for coating.
  8. Using a 2 oz ice cream scoop or a 1/4 measuring cup, scoop out dough and toss in the cinnamon-sugar mixture.
  9. Place about 5 cookies on the prepared baking sheet, spaced apart.
  10. Bake for 13-15 minutes, or until edges are light golden and centers are pale and puffed. They will darken and flatten as they cool.
  11. If cookies spread too much, use a fork to nudge in the sides right after removing from the oven.
  12. Let the cookies rest on the baking sheet for about 3 minutes before transferring to a cooling rack.
  13. Continue baking the remaining cookies and enjoy!
