Ingredients
- 1 ½ lbs (about 3) skinless, boneless chicken breasts, sliced into cutlets
- Salt and pepper to taste
- ¾ cup all-purpose flour
- 1 teaspoon paprika
- 1 tablespoon butter
- 1 tablespoon olive oil
- 1 shallot, minced
- 3 garlic cloves, minced
- ¼ cup dry white wine (such as Sauvignon Blanc or Pinot Grigio)
- ¾ cup chicken stock
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1 teaspoon chili flakes
- ⅓ cup sundried tomatoes, chopped
- 1 tablespoon chopped fresh basil
Instructions
- Season the chicken cutlets with salt and pepper. Dredge them lightly in the seasoned flour mixed with paprika.
- In a large skillet over medium-high heat, melt the butter with olive oil. Shake off excess flour and brown the chicken cutlets for about 2-3 minutes on each side. Transfer to a plate and set aside.
- In the same skillet, sauté the minced shallots and garlic in the remaining butter and oil until fragrant. If necessary, add a bit more oil.
- Deglaze the pan with white wine, allowing it to reduce for about a minute. Lower the heat and add chicken stock, heavy cream, and Parmesan cheese.
- Stir in the chopped sundried tomatoes, Italian seasoning, and chili flakes. Simmer until the sauce thickens to your desired consistency, seasoning with additional salt and pepper to taste.
- Return the chicken cutlets to the skillet, add the fresh basil, and let simmer for about 5 minutes until the chicken is heated through.
