Peppermint Bark Cookies

Ingredients

  • 1/4 cup (55g) unsalted butter
  • 2 tbsp vegetable or olive oil
  • 8 oz 70-75% dark chocolate, chopped
  • 3/4 cup (150g) granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 tsp peppermint extract
  • 3 tbsp Dutch process cocoa powder
  • 3/4 tsp baking powder
  • 1/2 tsp kosher salt
  • 1/2 cup (63g) all-purpose flour
  • 1/4 cup dark chocolate chips (for topping)
  • 8 oz white chocolate bar, chopped
  • Candy canes, crushed (for garnish)

Instructions

  1. Add butter to a small saucepan over medium heat. Once melted, remove from heat and stir in the oil and dark chocolate until smooth. Set aside to cool.
  2. In a large mixing bowl, whisk together the eggs and sugar until pale yellow. Incorporate the melted chocolate mixture along with vanilla and peppermint extract.
  3. Mix in cocoa powder, baking powder, and salt, followed by the flour until the dough resembles brownie batter. Cover and let sit at room temperature for 15 minutes, then chill in the refrigerator for another 15 minutes.
  4. While chilling, melt the white chocolate in the microwave in 20-second intervals until smooth and thin. Chill it to help it reach a thick icing consistency.
  5. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  6. Using a large cookie scoop (3 tablespoons), place 4-5 scoops of dough on the baking sheet. Press a shallow indent in the center of each cookie with your thumb.
  7. Place 3-4 chocolate chips around the edge of the indent and fill it with a heaping teaspoon of melted white chocolate.
  8. Bake for 10-12 minutes, then allow cookies to cool on the pan for 3 minutes before transferring to a cooling rack and sprinkling with crushed candy canes.
  9. Let cool to room temperature before enjoying!
